Piña Colada Nice Cream

I love Nice Cream. It is such an easy and healthy alternative to ice cream in the hot summer heat in Louisiana. What I love most about nice cream is all the amazing flavours you can make!

What is Nice Cream? Nice cream is an alternative to ice cream that is a healthier gluten-free, low-calorie, plant based alternative to ice-cream which will satisfy any sweet tooth!

Now if you can tell, I am a huge fan of coconut flavours for the summer! And one of my favourite holiday drinks to have on the beach is a Piña Colada. Now with this recipe, you don’t need a beach! Enjoy this delicious healthy-ish treat whenever you want!

Tip One: Make sure your bananas are starting to brown before you freeze them.

If you freeze your bananas while they are green you will get a bit of an earthy taste to them. You want more of the caramelized sweet banana taste for this, so wait till they brown to freeze them.

To freeze your bananas just un-peel them, chop them up and throw them in a large freezer bag. That way you can just simply grab them when you need them!

Tip Two: If you don’t want to add rum, you don’t have to!

Just replace the amount of rum with water or more coconut milk. Easy!

Tip Three: Use any freezer-safe pan you want to freeze your nice cream.

I like to use my bread 1-pint loaf pan (see below), but if you don’t have that, no problem! Just make sure whichever container you use is freezer-safe, and you are good to go.

Piña Colada Nice Cream

Ingredients

  • 1 cup frozen bananas

  • 2 cups frozen pineapples

  • 1/4 cup shredded coconut

  • 1/4 cup coconut milk (*or 1/2 cup if you are not adding rum)

  • 1/4 cup white coconut rum

Directions

  • Add your bananas, pineapples, and shredded coconut to your blender. Then add in your coconut milk and rum. Blend in blender until smooth.
  • Either serve right away, or transfer to a loaf pan, spreading into an even layer. Tightly wrap with plastic and freeze until cold, at least 2 hours. Enjoy! 🙂
