Chocolate Chip Mini Egg Cookies

Chewy chocolate chip cookies with your favourite chocolate mini eggs added in!

I took my all time favourite chocolate chip cookie recipe and added my all time favourite chocolate treats, mini eggs! If you have never tried mini eggs you MUST. They are my all time favourite candy since I was little and whenever Spring would roll around, I would be so excited to get an extra large bag at the store!

Tip one: How do you make these cookies picture perfect? chop your mini eggs in half and place them on top of your cookies after your cookies have baked.

Now there are a couple of ways you can make these cookies. If you want them absolutely flavour filled with mini eggs, put the mini eggs right into your dough when you mix in your chocolate chips! They will be fine cooking with your dough but may not give you the picture perfect look. Trust me, you will still want to devour every last one.

However, if you want them to look fancy smancy, and are bringing these to an event, add the mini eggs on top after your cookies have baked. That way you see their bright beautiful shells!

Both ways tastes amazing, and I have taste tested both ways, and you will eat them all up either way.

Tip Two: Halfway through cooking take your cookies out and hit them against the counter, then pop them back in.

This will help you get that chewy texture you are looking for, and helps deflate the centre of the cookies (since they are filled with delicious mini eggs, yummmm).

Tip Three: How do you separate egg yolk easily?

To separate your egg yolk from your egg, for the easy way just use your hands! Crack your egg in a bowl and use your hands to pick up the egg yolk and put it in a new bowl. Then save your egg yolks for an omelette or another recipe, easy as that!

Tip Four: You must chop up your mini eggs.

I know, it’s an extra step. But since these cookies are more on the flat chewy side, if you don’t chop up your mini eggs your dough will simply not form correctly. So take the time to cut them in half. I find it helps if you bang them against the counter to create a crack, an then cut along the crack in the shell.

* Note this is a smaller batch cookie recipe, making about 12-15 cookies. To make more cookies simply double the recipe.

Ingredients

  • 3/4 cup salted butter, room temperature

  • 1 cup light brown sugar

  • 1/4 cup granulated sugar

  • 1 egg and 1 egg yolk

  • 1 teaspoon vanilla extract

  • 3/4 teaspoon baking soda

  • 1 3/4 cup all purpose flour

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup chopped up chocolate mini egg candy

Directions

  • Preheat oven to 350F and line a baking sheet with parchment paper.
  • Using a hand mixer cream butter, granulated sugar, and brown sugar together until light and fluffy.
  • Mix in egg and egg yolk until combined. Then add in vanilla and baking soda. Mix until combined. Stir in flour until combined.
  • Stir in chocolate chips and mini eggs until combined.
  • Scoop cookie dough onto the prepared baking sheet in about 1/2 tablespoon sized balls.
  • Bake at 350F for 5 minutes, then take the cookies out and bang the sheet pan on a counter, and then return and bake for another 5-8 minutes until just slightly brown on the edges.
