Oat Fudge Bars

Thick, chewy, chocolaty oat fudge bars that are the perfect treat!

If you go to Starbucks, you may know they have a delicious oat fudge bar. If you haven’t tried it, you need to try it! However, when I moved to Louisiana I learned that they don’t sell them at the Starbucks here! I knew I just had to create my own recipe.

And let me tell you these are even BETTER!

They are thick, chewy and gooey, with the crispy oat cookie layer. They are incredibly easy to make, with the toughest part being waiting for them to set before digging in.

Just simply delicious! And I mean they are healthy because they have oatmeal right? I say so.

Now there are some tips and tricks to making them the best bars they can be.

Tip One: Create an even oat cookie layer on the bottom, saving 1/4 of the dough to go on top in dollops.

This will help your fudge set on top and let your cookie layer cook evenly.

Tip Two: Use your microwave to make the fudge!

I mean of course you can use a double broiler method, but I like the easy way out. Using a microwave safe bowl melt your chocolate and butter together at 30 second intervals until fully melted. Than add in your room temperature sweetened condensed milk. Mix it together and you are done!

Of course if you want to go the more traditional way you can boil about 1/2 an inch of water in a medium saucepan and place a large glass bowl overtop (not touching the water). Then add your chocolate chips, butter and condensed milk to the bowl until it melts. Up to you, but I like the easier way (and less dishes way).

Tip Three: Having troubles letting your bars cool and set? Stick them in the fridge to set faster!

I recommend at least 3 hours to set at room temperature or about 1.5 hours in the refrigerator.

Ingredients

  • Oatmeal Cookie Layer
  • 1/2 cup salted butter, melted

  • 1/2 cup granulated sugar

  • 1/2 cup light brown sugar

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 1 cup and 2 tablespoons all purpose flour

  • 1 1/3 cups old fashioned oats

  • Fudge Layer
  • 1 1/4 cup semi-sweet chocolate chips

  • 2 tablespoons salted butter

  • 14 oz (1 cup) sweetened condensed milk (room temperature)

Directions

  • Preheat oven to 350F. Line and grease an 8×8 baking dish.
  • Oatmeal Layer
  • In a large bowl using a hand mixer cream together butter, granulated sugar and brown sugar. Add in egg, vanilla and mix until combined.
  • Add in flour and mix until combined and no lumps. Stir in oats until combined. Set aside.
  • Fudge Layer
  • In a medium microwave safe bowl add chocolate chips and butter. Microwave at 30 second intervals, mixing in between each time, until melted. Stir in sweetened condensed milk until combined and smooth.
  • Assembly
  • Spoon about 3/4 of the oatmeal dough onto the bottom of the 8×8 dish, creating an even layer. Save 1/4 of the dough for dollops on top of the fudge.
  • Spoon the fudge layer on top of the cookie layer.
  • Spoon the remaining oatmeal dough on top, leaving some fudge showing.
  • Bake
  • Bake at 350 for 25-30 minutes until oatmeal on top is set.
  • Let the bars cool for 3 hours room temperature, or 1.5 hours in the refrigerator before cutting and enjoying.

Notes

  • Store bars in an airtight container at room temperature for up to 4 days, or in the fridge for up to a week.
