This is a very special recipe! This recipe has been passed down from generation to generation on my Husband’s side of the family. And it all started with his Great-Great Grandma.

Every Christmas my Mother-in-law would send us the most delicious cookie box and it always included these shortbread cookies! They are a traditional Scottish shortbread cookie that will melt in your mouth with buttery goodness. However, since we moved to a different Country we are unable to get these delicious cookies anymore shipped to us. Ah, how I miss her baked goods. So my Mother-in-law was kind enough to share the recipe with me, and is allowing me to share it with all of you! Thank you Chris, and thank you to Grandma Dot Craigie!

Tip One: Now I was also lucky enough to learn some tricks and tips from my Husband’s Grandma, and the first one is use a high end butter!

There are only 4 ingredients in this recipe, with butter being the star of the show! So don’t skimp out.

Tip Two: Knead in the last of your flour into your cookie dough.

This is the traditional way of Grandma Craigie and it makes the difference! Of course now a days we have stand mixers, but kneading in the last bit of flour helps create those butter layers and texture you are going for.

Tip Three: If you don’t have access to berry sugar/caster sugar you can make it yourself!

Berry sugar is just fine sugar (or caster sugar) that can be easily dissolved. If you don’t have access to it, you can just grind granulated sugar using a food processor or a blender for 30 seconds to make it. Easy!

Melt in your mouth, buttery, scrumptious shortbread cookies! Made with only 4 ingredients!

Ingredients

  • 2 cups salted butter, room temperature

  • 1 cup berry sugar (or caster sugar)

  • 3 1/2 cups all purpose flour

  • 1/2 cup cornstarch

Directions

  • Preheat oven to 250F, and line a baking sheet with parchment paper.
  • Using a hand mixer, cream butter and berry sugar together until combined. Add 2 cups of flour and mix until combined. Then add 1/2 cup of cornstarch and mix until combined.
  • Remove batter to a well floured surface. Knead in remaining 1 1/2 cups of flour into the dough slowly until it is combined and no more lumps.
  • Press down your dough into a rectangular shape, and roll it out to 1/2 inch thickness.
  • Using a floured knife, cut the dough into rectangles and prick with a fork.
  • Put cookies on the prepared cooking sheet and bake at 250F for 45-60 minutes until edges start to get golden brown.

Notes

  • Store in an airtight container for up to a week.
