Overnight Strawberry Oat Parfait

I have tried many overnight oat recipes, and although I enjoy them I just can’t get past the mushiness texture. That is, until I made it parfait style. The trick to these overnight oats is to use a minimal amount of milk, and to add it very last. This helps it slowly soak through your parfait layers over night, leaving to a bit of crunch still the next morning. No mushiness here!

Another great thing about this parfait, is there is so many layers of flavour. There is the honey sweetened Greek yogurt, the sweetness of the fresh strawberries, and the oats sprinkled with cinnamon. Every bite if full of flavour and variety, it really is so good.

Now there are some tips to making this parfait:

Tip One: Whenever you add your layer of oats, sprinkle it with some cinnamon!

Tip Two: Don’t want to use fresh strawberries? Use frozen ones! They will de-frost overnight in the fridge in your parfait .

Tip Three: Pour your milk in last. This will allow your milk to slowly soak into the layers of your parfait over night, leaving some oats a little more soaked than others, which creates a really nice bite!

Tip Four: You do not, I repeat you do not need a fancy mason jar to make overnight oats. Use an old pasta jar, use a cup, use what works for you! If you use a cup just make to cover it with some plastic wrap while it sits in the fridge overnight.

Ingredients

  • 1 cup Greek yogurt

  • 1 tbs honey

  • 1 cup old fashioned oats

  • 1 tsp cinnamon

  • 1/4 cup sliced fresh (or frozen) strawberries

  • 1/4 cup of milk

Directions

  • In a small bowl, mix your Greek yogurt and honey together.
  • Start putting your layers in your jar (or cup). Start with oats, sprinkle with cinnamon, then add a layer of yogurt, then a layer of strawberries. You can add an extra drizzle of honey if you like it sweet. Repeat until you fill your jar/cup 3/4 of the way.
  • Slowly add in your milk. Do not stir or mix it up, just simply pour it on top until your jar/cup is full.
  • Cover your jar/cup and let it sit in the refrigerator over night. The next morning, just take it out and enjoy!
