If you want a simple, yet fluffy pancake these are it. You will never touch a boxed pancake mix again after these! They are buttery, light, and so tasty. They are also a nice simple base to whichever toppings you want to add to them.
I first developed this recipe when I was on the quest to find some fluffy, yet still delicious pancakes! A lot of the fluffy pancakes require vinegar or lemon juice and for it to sit with baking soda or powder for at least 10 minutes. I don’t know about you, but I don’t have time for that! I need something easy and quick, especially if I want to replace a boxed pancake mix.
Then I created these. And they were the fluffy pancakes of my dreams! The trick is to use baking soda, and baking powder. I know it seems like a lot, but I promise you won’t taste it! I also add a hint of cinnamon to give a nice kick to these pancakes. They really are delicious.
Also, did I mention these pancakes are incredibly easy to make? Because they are! Whisk together your dry ingredients, and then add your wet ingredients. Easy as that!
As always, I have some tips to make sure your pancakes come out nice and fluffy!
Tip One: Let your pancake batter rise.
This is an important step to not skip! By letting your pancake batter sit untouched for at least 3 minutes after you mix it all together, helps it get airy and thicken it up. I know it’s annoying to wait 3 whole minutes, but you can use those three minutes to do a bit of cleaning up, make your morning coffee, or chop up some fruit toppings.
Tip Two: Wait until your pancakes bubble on your griddle before flipping!
This is a simple trick to know when your pancakes are ready to be flipped. This helps you make sure your pancake is cooked through.
Tip Three: Your batter may be thicker or thinner depending on the milk you use.
Dairy free milk tends to be a little thinner than dairy milk. If you find your batter to be too thin, just add a tablespoon of flour. If you find your batter to be too thick, just add a tablespoon more of milk. For these pancakes you want your batter to be on the thicker side.

Ingredients
2 1/2 cups all purpose flour
1/4 cup sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups milk
2 eggs
1 tsp vanilla
3 tbs melted butter
Directions
- Preheat your pan to medium high.
- In a large bowl mix together your flour, sugar, baking powder, baking soda, cinnamon, and salt until there are no lumps.
- Create a “well” (or hole) in the middle of your dry mixture, then add your milk. Whisk together. Then add your eggs, vanilla, and melted butter. Mix until just combined. Do not over mix.
- Let your batter rise for at least 3 minutes.
- Spray your pan with a non-stick cooking spray. Drop your pancake batter onto your pan in your desired size.
- Cook until small bubbles form on top of the batter, then flip over your pancake. Cook until the bottom is a light golden brown. Enjoy! š
