Homemade Tzatziki

Tzatziki is the most delicious yogurt cucumber sauce that is sure to go with any Greek dish your heart desires. It is made simply with yogurt, cucumber, olive oil, fresh herbs, garlic, and lemon juice. It’s goes great with some pita bread, or to dip your vegetables in!

I was lucky enough to travel to Greece two summers ago, and I just loved to order tzatziki any chance I got. And let me tell you, this recipe is the closest you can get to Greece!

Tip One: After you grate your cucumbers, you have to get rid of the excess moisture. I recommend wrapping it up in paper towel, or a hand towel, and squeezing it out!. Then I sprinkle it with about a tsp of salt and just let it sit for 10 minutes, and then squeeze it out again. Then you are good to go!

Tip Two: If you have a food processor, grate your cucumber using that! If not, use the large grating side of your grater. Don’t worry about peeling the skin off or anything, keep it easy!


Homemade Tzatziki

Servings

Ingredients

  • 1 medium cucumber, grated

  • 1 1/2 cups plain Greek yogurt

  • 2 tbs olive oil

  • 2 tbs chopped fresh dill

  • 1 tbs lemon juice

  • 1 garlic clove, minced

  • 1/2 tsp salt

Directions

  • Wrap your grated cucumber in a paper towel, and squeeze out any extra moisture. Sprinkle with a tsp of salt and let it sit in a bowl for 10 minutes. Then squeeze it out again, and pat dry.
  • In a medium sized bowl add the grated cucumber, yogurt, olive oil, chopped dill, lemon juice, garlic and salt. Mix until combined. Taste and add additional salt if needed.
  • Serve tzatziki immediately or chill for later. Can keep in the refrigerator for up to four days.
