Funfetti Snack Cake made from scratch, full of sprinkles, and topped with the most creamy buttercream frosting! No fuss, made with simple ingredients!

Ingredients

  • Funfetti Cake
  • 1 1/2 cups all purpose flour

  • 1 cup granulated sugar

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup canned coconut milk (or milk of your choice)

  • 1/2 cup plain Greek yogurt

  • 3 tbs vegetable oil

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 cup sprinkles

  • Buttercream Frosting
  • 1 1/2 cups powdered sugar

  • 1/4 cup softened butter

  • 1 tsp vanilla

  • 1 tbs milk

Directions

  • Cake
  • Preheat oven to 350F. Prepare an 8×8 baking dish by greasing it and adding parchment paper lining.
  • In a stand mixer combine flour, sugar, baking powder, and salt together until combined.Add in milk, Greek yogurt, and vegetable oil. Mix until combined.
  • Then add in egg and vanilla extract. Mix until combined. Then stir in sprinkles.
  • Pour batter into your prepared baking dish. Bake for 30-35 minutes, until a toothpick inserted in the centre comes out clean.
  • Icing
  • Using a hand mixer, cream room temperature butter until smooth and fluffy.
  • Gradually add powdered sugar until incorporated. Then add in milk and vanilla. Beat for another 2-3 minutes. Add more milk if needed to get your desired icing consistency.
  • Assembly
  • Wait for cake to cool before frosting. Frost cake with icing, and then sprinkle more sprinkles on top. Enjoy! 🙂
