Easy Rice Krispie Treats

This recipe is my go-to for making these easy treats at home. Once you find out how simple it is to make them, you will never buy store-bought ones again! They are ooey gooey, and full of all the marshmallow goodness that these treats are known for.

That being said I do have a few tricks up my sleeve that make these rice krispie treats better then other recipes. And that is all in the way we make them.

Tip One: Only melt half your marshmallows, then add the other half after you’ve added in your rice krispie cereal!

This will add little pockets of marshmallow goodness and add in some flavour.

Tip Two: When packing down your mixture into your 8×8 dish, do not press it down too much!

If you press down too much your treats will become super dense. This will also make them become harder faster. Just use your fingers (get them wet with water before doing so to prevent stickiness) or a back of a spatula to just gently press it in place.

Ingredients

  • 6 tablespoons butter

  • 16 oz bag of mini marshmallows (fresh!)

  • 1 teaspoon vanilla extract

  • 6 cups rice krispie cereal

Directions

  • Grease or line an 8×8 baking dish with parchment paper. Set aside.
  • In a large pot melt the butter over medium heat, stirring constantly.
  • Once melted, add half the bag of marshmallows. Stir until completely melted. Take off heat and immediately add in your cereal, fold it in until it is coated, then add in the rest of your marshmallows. Keep folding until those marshmallows are a combined and a bit melted in with the mixture (you may need to put it back on the heat for a minute or two to get them to combine).
  • Scoop the mixture into your prepared baking pan. Using a spatula gently spread the mixture to an even layer, and gently press down. Don’t press to hard or your treats will be to dense.
  • Allow treats to set for 1 hour before cutting into them.

Notes

  • Cover and store treats at room temperature in an air-tight container for up to 3 days.
