Easy Cream Cheese Swirl Brownies

Delicious easy brownies made with chocolate chips! No fancy chocolate needed. Then swirled with a delicious cream cheese filling, it is hard not to eat the whole dish in one go!

I adapted my absolute favourite fudge crinkle top brownie recipe and added a delicious cream cheese swirl on top.

With just the perfect amount of cream cheese added on top, you have a delicious brownie without it being overpowered with cream cheese flavour.

Tip One: Use chocolate chips to make this brownie recipe! No fancy chocolate needed.

Heat up your chocolate chips and butter in a microwave safe bowl. Do not bother getting fancy and using your stovetop, unless you really like to do extra dishes. Just heat up your butter and chocolate chips in a large microwave safe bowl at 30 seconds at a time, until they are melted together. Then use that same bowl to mix the rest!

Tip Two: If you want a crinkly top, you must whisk your eggs for at least 3 minutes.

You want your whisked eggs to have bubbles on top. This will ensure you get that nice crinkle top crust on the top of your brownies.

Tip Three: Make sure your cream cheese is room temperature.

This makes whisking your cream cheese filling so much easier and also helps your brownies cook evenly. If you forgot to leave your cream cheese out, just empty it out onto a microwave safe bowl and microwave it for 10 seconds.

Tip Four: How do you make the most perfect cream cheese swirl on the brownies? Well that’s the great thing, have fun with it!

There is no perfect way to make a swirl. No swirl will be the same and it’s all about creating your own and having fun with it! It’s a great recipe to make with kids, let them do the swirling!

Ingredients

  • Brownie Base
  • 1/2 cup salted butter

  • 1 cup semi-sweet chocolate chips

  • 3/4 cup granulated sugar

  • 1/2 tablespoon vanilla extract

  • 2 large eggs (whisked for 3 minutes)

  • 1/4 cup all purpose flour

  • 1/4 cup cocoa powder

  • 1/2 tablespoon baking powder

  • Cream Cheese Swirl
  • 4 oz cream cheese room temperature

  • 1/4 cup sugar

  • 1 large egg

Directions

  • Brownie Base
  • Preheat oven to 350F. Prepare an 8×8 baking dish by greasing and lining with parchment paper.
  • In a small bowl, whisk your 2 eggs for three minutes until there are bubbles. Set aside.
  • In a large microwave safe bowl add butter and 1 cup of semi-sweet chocolate chips. Microwave for 30 second intervals, stirring each time in-between, until melted together.
  • Add in sugar to the chocolate/butter mixture. Mix until combined.
  • Add in vanilla and pre-whisked eggs, mix until combined. It will take a while for it to do so, but keep stirring until it does.
  • Stir in your flour, baking powder, and cocoa until combined and there are no more lumps. Set aside.
  • Cream Cheese Swirl
  • In a medium sized bowl, whisk together cream cheese, sugar and egg until combined.
  • Assembly
  • Pour your brownie batter into your prepared baking dish. Dollop your desired amount of cream cheese mixture on top. Using a knife, run up and down the batter, swirling the cream cheese mixture into the brownie batter.
  • Bake at 350F for 28-30 minutes, or until you are able to insert a toothpick in the centre and it comes out clean. Let cook for at least 10 minutes before enjoying.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
