Fudge Crinkle Top Brownies

Okay, I have a confession. I am addicted to chocolate! I must have chocolate at least once a day, every. single. day. No exceptions! That’s why I always always always have a chocolate treat baked and ready to munch on. I also have another confession… I have baked wayyyy too many batches of brownies, more than you can imagine. I remember when I was in middle school, a friend of mine introduced me to the magical world of home made brownies. Me, an avid box brownie fanatic, was not convinced that it could be as easy and worth it for me to make them from scratch. But boy, was I wrong! She wrote me out a basic recipe that her mom swore by, and I kept that recipe for years.

Now I must say, from that day on, I have tried many many brownie recipes. I have tweaked and experimented and failed in the past. Some recipes can be too gooey, and some have way to much going on, like added peanut butter or graham crackers. That’s fine and all, but I like a good basic fudge brownie that can speak for itself. Call me basic brownie girl. And now I can say, I have now created my die hard brownie recipe. One that never ever fails me, and always turns out absolutely delicious! Now it may not be as quick as a boxed brownie mix, but trust me it is worth it.

Tip One: Heat up your chocolate chips and butter in a microwave safe bowl. Do not bother getting fancy and using your stovetop, unless you really like to do extra dishes. Just heat up your butter and chocolate chips in a large microwave safe bowl at 30 seconds at a time, until they are melted together. Then use that same bowl to mix the rest!

Tip Two: You MUST whisk your eggs for at least three minutes. You want your whisked eggs to have bubbles on top. This will ensure you get that nice crinkle top crust on the top of your brownies. It is absolutely worth it, do not skip this step!

Fudge Crinkle Top Brownies

Ingredients

  • 1/2 cup salted butter

  • 1 cup semi-sweet chocolate chips and 1/4 cup more to stir in later

  • 3/4 cup white sugar

  • 1/2 tbs vanilla

  • 2 large eggs whisked

  • 1/2 tbs baking powder

  • 1/4 cup all purpose flour (or gluten free)

  • 1/4 cup coco powder

Directions

  • Preheat oven to 350 F. Prepare a greased 8×8 baking pan.
  • In a bowl whisk 2 eggs for 3 minutes, until there are bubbles in your mixed eggs. Set aside.
  • In a large microwave safe bowl add your butter and 1 cup of semi-sweet chocolate chips. Microwave for 30 second intervals, stirring each time in-between, until they are melted together.
  • Add your sugar to the chocolate/butter mixture. Mix until combined.
  • Mix in your vanilla and pre-whisked eggs. It will take a while for it to completely mix in with the mixture, but keep stirring until it does.
  • Stir in your flour until just combined. Then stir in your coco powder until just combined. Then stir in your baking powder.
  • Lastly, stir in your remaining 1/4 cup chocolate chips.
  • Pour your batter into your prepared baking dish.
  • Bake at 350F for 28-30 minutes, or until you are able to insert a toothpick into the centre and it comes out clean. Enjoy!
