Crispy Baked Sweet Potato Fries with Garlic Aioli

These are the best ever sweet potato fries! They are crispy, salty-sweet, and taste so good with a simple 3 ingredient aioli. These fries are also oven-baked, meaning a healthier option to your fast-food favourite fries.

I’ve made many version of sweet potato fries and I have finally learned the tricks to making the perfect crispy fries! And I am here to share with you those tricks, so you can learn from my past mistakes!

Tip One: Cut your fries thin.

You want your fries to be about 1/4″ wide. If they are too thick they won’t get crispy.

Tip Two: Toss your fries in the cornstarch and oil in a large bowl before putting it on your baking dish.

Just sprinkling it on will not work, you have to give it a good toss and make sure the cornstarch and oil is coating all your fries evenly.

Tip Three: DO NOT overcrowd your fries on your baking sheet!

If they are too close to each other they will steam, and not get crispy. Use two pans, and make sure your fries don’t overlap and pile on top of each other. Also use parchment paper! Otherwise you risk your fries getting stuck to the sheet pan.

Tip Four: Halfway through cooking, flip your fries.

And swap your pan positions (from lower to upper rack and vice versa). The lower rack tends to cook quicker, so by switching it you will get a perfect golden outside.

Tip Five: Season the fries with whatever your heart desires!

This recipe we just season with salt, but of course you could add some garlic powder, pepper, even parmesan if you’d like. Just make sure to add your seasoning after the fries have cooked. If not it can burn, creating a crisp outside but not so crisp inside.

Easy crispy oven baked sweet potato fries. Made with an easy 3 ingredient garlic aioli!

Ingredients

  • Sweet Potato Fries
  • 3 medium sweet potatoes

  • 1 tbs cornstarch

  • 1/2 tsp salt

  • 2 tbs olive oil

  • Garlic Aioli
  • 1/4 cup mayonnaise

  • 1 garlic clove, minced

  • 1 tbs lemon juice

Directions

  • Sweet Potato Fries
  • Preheat oven to 425F. Line two baking sheets with parchment paper.
  • Peel sweet potatoes and cut them into fry shaped pieces about 1/4″ thick. Do this by halving the sweet potato lengthwise, then put the flat side on the cutting board. Cut slabs length wise, then cut 1/4″ strips from the slabs.
  • Place your fries into a large bowl. Sprinkle them with the cornstarch, salt and olive oil. Toss them so they are coated.
  • Transfer half the fries to one baking sheet, and then the other half to another baking sheet. Arrange them in a single layer, spread out from each other.
  • Bake at 425F for 20 minutes.
  • After 20 minutes, take the baking sheets with the fries out of the oven and flip them over to their other side. Swap the baking sheets (top for bottom, bottom for top) and bake for another 10-15 minute until the fries are crispy. They will be a little puffy. *keep an eye on them as cooking time will depend on how thick you cut your fries*.
  • Garlic Aioli
  • In a medium sized bowl mix mayonnaise, garlic and lemon juice together until combined. Garnish with some parsley if desired.
