Coffee Dry Rub Chicken

Do you find whenever you cook your chicken breasts they are bland, dry and not juicy? Well I’ve been there too. I experimented with certain marinades but I just did not have the patience or time to have my chicken marinade for hours on end before I cooked it. I needed something quick and easy. Then I remembered the power of a dry rub. I have used dry rubs on steak and pork before, but I haven’t really used it on chicken. It gave me an idea to try out a dry rub on the blandest piece of meat, chicken breast. I was determined to make chicken breast taste good once again!

After gathering what I had in my pantry I noticed I had a lot of spices, sugar, flour… but I also had ground coffee! Well technically it is my husband’s grounded coffee, but I thought he wouldn’t have noticed if I snuck a scoop or two… hehe. It then gave me an idea to mix some spices I usually throw on my chicken with this ground coffee. Which then created my dry coffee rub!

After creating this, I will never cook chicken breast the same again! It turned my bland chicken into a juicy tender flavourful piece of meat. And now I use it all the time! I promise you that your chicken will not taste like coffee! Nor will it be sweet. It adds almost a smoky flavour to the chicken that tastes so great.

Another great thing about it is it takes less then 5 minutes to whip up! Just mix your ingredients together, spread it on your chicken breasts and you are good to go.

Tip One: One way to make this recipe even easier than it already is, is to buy pre-grounded coffee from the store. No need to grind it up yourself. My kind of cooking.

Tip Two: If you want juicy chicken, buy a meat thermometer! I’m telling you, this is the fastest, easiest way to tell when your chicken is cooked. It will also ensure you do not overcook your chicken, therefore drying it out. Trust me it is worth every penny! Buy an easy digital quick read meat thermometer, and you will find yourself using it more than you think.

Tip Three: Let your chicken breast rest after cooking!

Please let your chicken breast rest for at least 5 minutes after cooking before you cut into it. This will allow it to finish cooking and soak up all those delicious juices, leading to the most tender and delicious chicken. If you are worried about it getting cold, just wrap it in tinfoil while it rests.

Now I like to grill my chicken on the BBQ for this recipe. You will see below that under the directions it will give you prep times and how to grill. However, I have also made this in the oven before if you do not have a grill. If you are baking in the oven, just bake at 450F for 15-20 minutes until inside temperature of chicken is 165F (depends on the size and thickness of your chicken breasts).

Ingredients

  • 4 chicken breasts

  • 2 tbs garlic powder

  • 2 tbs ground coffee

  • 2 tbs paprika

  • 2 tbs salt

  • 1 tbs brown sugar

Directions

  • Preheat grill to medium high heat.
  • In a medium sized bowl mix together your garlic powder, ground coffee, paprika, salt and brown sugar.
  • Rub your dry mixture onto each chicken breast, ensuring to coat all sides of the chicken. Any extra dry mixture can be put in an air tight bag and stored in a dry area.
  • Place chicken on grill and grill each side for 4-6 minutes, depending on thickness. You want the chicken to get to an internal temperature of 165F.
  • Take off the grill and let rest for at least 5 minutes before cutting into it.
