Best Ever Chocolate Snack Cake

I am an avid chocolate lover, and have tried many many chocolate cake recipes. I have also been trying to create a no fuss chocolate cake recipe, that can be made in one bowl with no extra steps. Just put it all in together, bake, and be done! Well let me tell you, I have done it!

After much trial and error I have created the most perfect chocolate cake, and did I mention it is vegan! Meaning it is dairy free, egg free, but still FULL of flavour.

The secret? Coffee! Coffee really helps bring out the chocolate flavour in this cake, especially since we are only using cocoa powder, nothing fancy. If you want to step it up even MORE, use brewed espresso. I love to use my espresso machine and brew up espresso for this cake to give it even more of a flavour! However, if you don’t have espresso, no worries just use some brewed coffee!

Ingredients

  • Chocolate Snack Cake
  • 1 1/4 cup all purpose flour

  • 1 cup granulated sugar

  • 3/4 cup cocoa

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/4 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 1/4 cup brewed coffee (or brewed espresso)

  • Chocolate Buttercream Frosting
  • 1/4 cup vegan butter (or normal butter if you are not vegan)

  • 2 tbs cocoa

  • 1 1/2 cup powdered sugar

  • 1 tbs almond milk (or milk of your choice)

Directions

  • Chocolate Snack Cake
  • Preheat oven to 350F and grease an 8×8 baking dish.
  • In a large bowl whisk together flour, sugar, cocoa, baking soda, and salt until combined and no clumps.
  • Create a well in the middle of the dry ingredients and pour in your vegetable oil, brewed coffee and vanilla extract. Mix until just combined and there are no more clumps of the flour mixture.
  • Pour your cake batter into your prepared 8×8 baking dish and bake at 350F for 30-35 minutes until a toothpick inserted in the middle comes out clean.
  • Chocolate Buttercream Frosting
  • Using a hand mixer, beat butter until it is light and fluffy.
  • Add in cocoa, powdered sugar, and milk. Beat until combined.
  • Assembly
  • Once cake has cooled for at least 10 minutes, top with chocolate buttercream and enjoy! 🙂
