Whipped Ricotta and Goat Cheese with Baked Crostini

Need a last minute easy appetizer that will win over anyone? Make this! The great thing with this appetizer is not only is it incredibly easy to make, but also your guests can decide their own toppings! Make a spread with some tomatoes and fruit, or serve it on it’s own! It is pretty darn good just on it’s own.

I first had whipped ricotta and goat cheese at our favourite Italian restaurant where we used to live. It was incredible! Every time we went there we had to order it, and would rave about it to others. My close friends and family probably know exactly what dish I’m talking about!

So that leads me to now, living far away and sadly not able to access my favourite appetizer. So I knew I had to recreate it! And let me tell you, this is just as good!

Tip One: This is best served warm, and best served on warm crostini as well. So try and make this right before you serve it!

Tip Two: Don’t skip the whipping part! There is a reason why it’s called “whipped” ricotta and goat cheese. It is best done in a blender or food processor, but of course with some muscles you can totally do it by hand with a fork.

Tip Three: Use fresh, high quality cheeses! These are the stars of your dishes, so do not skimp out!


Whipped Ricotta and Goat Cheese

with Baked Crostini

Ingredients

  • Whipped Ricotta and Goat Cheese
  • 1 cup ricotta cheese

  • 6 tbs goat cheese

  • 2 tsp milk

  • Crostini
  • 1 baguette or french bread loaf

  • 1/4 cup olive oil

Directions

  • Baked Crostini
  • Preheat oven to 375F.
  • Slice bread into 1/4 inch slices. Place on a baking sheet and brush each slice, on both sides, with olive oil. Sprinkle with a little salt. Bake for 5 minutes, flip, then bake for another 5 minutes until crostini is golden brown.
  • Whipped Ricotta and Goat Cheese
  • While crostini is baking, make your whipped cheese. Add your ricotta, goat cheese, and milk to a blender or food processor. Blend until smooth. Add more milk if needed.
  • Put the whipped cheese in an oven safe dish, and put in the oven for 5 minutes to warm it up. Or microwave for 1 minute to warm it up. Drizzle olive on top to serve.
  • Assembly
  • Spoon warm whipped cheese on your crostini and enjoy! 🙂
