A snack cake is a small batch cake batter, that will bake a one-layer cake! The perfect size to celebrate the small things in life. It also is the perfect cake to enjoy for a small group! Just bake it in an 8×8 dish or a single cake pan.
But do I want just any snack cake? No! I want a fluffy, delicious, tasty cake. And this my friends, is it.

Vanilla Coconut Snack Cake

Ingredients
- Vanilla Coconut Cake
1 1/2 cup all purpose flour
1 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup canned coconut milk
1/2 cup plain Greek yogurt
3 tbs vegetable oil
1 egg
1 tsp vanilla extract
- Buttercream Coconut Frosting
1 1/2 cup powdered sugar
1/4 cup softened butter
1 tbs coconut milk
1 tsp vanilla
1/2 cup coconut flakes (for topping)
Directions
- Cake
- Preheat oven to 350F. Prepare an 8×8 baking dish or circle cake pan by greasing it and adding parchment paper lining.
- In a stand mixer combine flour, sugar, baking powder, and salt together until combined.
- Add in coconut milk, Greek yogurt, and vegetable oil. Mix until combined.
- Then add in egg and vanilla extract. Mix until combined.
- Pour batter into your prepared baking dish. Bake for 30-35 minutes, until a toothpick inserted in the centre comes out clean.
- Icing
- Using a hand mixer, cream room temperature butter until smooth and fluffy.
- Gradually add in powdered sugar until incorporated. Then add in coconut milk, and vanilla. Beat for another 2-3 minutes.
- Assembly
- Wait for cake to cool before frosting. Frost cake with icing, and the press coconut flakes into the icing. Enjoy! 🙂
