A snack cake is a small batch cake batter, that will bake a one-layer cake! The perfect size to celebrate the small things in life. It also is the perfect cake to enjoy for a small group! Just bake it in an 8×8 dish or a single cake pan.

But do I want just any snack cake? No! I want a fluffy, delicious, tasty cake. And this my friends, is it.

Vanilla Coconut Snack Cake

Ingredients

  • Vanilla Coconut Cake
  • 1 1/2 cup all purpose flour

  • 1 cup sugar

  • 2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup canned coconut milk

  • 1/2 cup plain Greek yogurt

  • 3 tbs vegetable oil

  • 1 egg

  • 1 tsp vanilla extract

  • Buttercream Coconut Frosting
  • 1 1/2 cup powdered sugar

  • 1/4 cup softened butter

  • 1 tbs coconut milk

  • 1 tsp vanilla

  • 1/2 cup coconut flakes (for topping)

Directions

  • Cake
  • Preheat oven to 350F. Prepare an 8×8 baking dish or circle cake pan by greasing it and adding parchment paper lining.
  • In a stand mixer combine flour, sugar, baking powder, and salt together until combined.
  • Add in coconut milk, Greek yogurt, and vegetable oil. Mix until combined.
  • Then add in egg and vanilla extract. Mix until combined.
  • Pour batter into your prepared baking dish. Bake for 30-35 minutes, until a toothpick inserted in the centre comes out clean.
  • Icing
  • Using a hand mixer, cream room temperature butter until smooth and fluffy.
  • Gradually add in powdered sugar until incorporated. Then add in coconut milk, and vanilla. Beat for another 2-3 minutes.
  • Assembly
  • Wait for cake to cool before frosting. Frost cake with icing, and the press coconut flakes into the icing. Enjoy! 🙂
