Spicy BBQ Bowl

Something I miss about Canada is the variety of healthy fast food options. In my new small town, we do have a ton of fast food, but not too many of those are healthier options. Something I miss a lot from Edmonton is Freshii! I used to love getting their Pangoa bowl for lunch or dinner, and it was a quick healthy fresh meal to go. Unfortunately, I don’t have that option now, so I thought about making a copy-cat recipe at home! Something that is so signature about Freshii’s Pangoa bowl is their spicy barbecue sauce. After much trial and error, I think I hit the mark for making a replica to their delicious sauce.

The other great thing about my copy-cat recipe is you can use canned pantry items! The trick to jazzing them up is to pan fry your canned corn and beans to heat them up. It takes less than 5 minutes and will definitely make the difference than simply microwaving them.

So if you are looking for a copy-cat recipe to the Pangoa bowl, or simply a healthy dinner or lunch, this is it!

Tip One: To take this bowl a step above, add in your favourite protein. I have added fried tofu, chickpeas and grilled chicken to this dish in the past and all were delicious additions. Up to you!

Tip Two: Use a type of rice that you like best. My husband absolutely loves Thai Jasmine rice, so that’s what you will find I used for this dish in the recipe below. But if you want to use a brown rice, or even couscous, go for it!


Spicy BBQ Bowl

Ingredients

  • Bowl Ingredients
  • 1 cup rice, cooked

  • 1 cup black beans

  • 1 cup whole corn kernels

  • 1 cup cherry tomatoes, halved

  • 1 avocado, cut in slices

  • 1 tbs chopped cilantro

  • 1/4 cup shredded sharp white cheddar cheese

  • 1 lime, quartered

  • Spicy BBQ dressing
  • 3 tbs Greek yogurt

  • 2 tbs olive oil

  • 1 tbs Sriracha hot sauce

  • 3 tbs spicy BBQ sauce (any pre-made brand will do)

Directions

  • Add cooked rice, black beans and corn to a large bowl and mix together.
  • To make dressing, in a bowl combine Greek yogurt, olive oil, Sriracha and spicy BBQ sauce.
  • To assemble, spoon your rice mixture into a bowl. Top with desired amount of tomatoes, avocado, chopped cilantro, cheese, and a lime wedge.
  • Drizzle on the Spicy BBQ dressing. Enjoy!
