Healthy Mexican Street Corn

When we moved to Louisiana we noticed there were a ton of Tex-Mex restaurants. They dominate in the restaurant world down here, and I am not complaining! We have tried our fair share of Tex-Mex restaurants and there is something on the menu that I will always order no matter what, and that is Mexican Street Corn.

Mexican Street Corn is a common street food in Mexico. It is usually served on a skewer, topped with a creamy mayonnaise sauce and toped with cotija cheese.

I enjoy it so much, but I also know it cannot be the healthiest side dish choice. That led me to thinking, how I can re-create it at home but in a healthier way? Which led me to this recipe. And boy, does it satisfy my cravings! I gave this corn to my husband without telling him it was a healthier version, and he chomped it down thinking it was the real deal!

My secret? I use plain Greek yogurt in place of mayonnaise! I also use feta cheese in place of cotija cheese. Easy healthier replacements, that no one will notice!

The best part is, it is another simple and easy recipe! All you have to do is mix up some lime juice and Greek yogurt, spread it on your corn and add your seasoning and toppings. Quick and easy, my kind of cooking!

Tip: If you are cooking for a large group, make it into a salad! Use all the same ingredients, just use some canned corn (I promise I won’t tell anyone) and mix it up. Another trick I like to do is grill my corn, and then just cut off the kernels from the cob, and make a Mexican street corn salad out of it! See below.


Healthy Mexican Street Corn

Ingredients

  • 4 corn on the cobs husked

  • 1/4 cup plain Greek yogurt

  • The juice of 1/2 of a lime

  • 1/4 tsp chili powder (or to taste)

  • 1/4 cup chopped cilantro

  • 1/2 cup feta cheese

Directions

  • Preheat grill or grill pan to medium high heat.
  • In a medium sized bowl mix together Greek yogurt and lime juice. Set aside.
  • Grill corn, turning often, until slightly charred all over. About 10 minutes. Take off grill when finished.
  • Brush on your desired amount of the yogurt lime sauce on the corn.
  • Sprinkle on your feta cheese, cilantro and chili powder to taste.
  • Serve warm, and enjoy!
