Healthy Greek Salad with Kalamata Olive Purée

This salad could not get more easier. For a really good Greek salad, you have to let the vegetables you are using speak for themselves. And that’s exactly what this recipe does. You won’t find any store bought Greek salad dressing here, just simple high quality extra virgin oil and some thyme. Easy! What also sets this Greek salad apart is the Kalamata olive purée. Packed full of flavour, it is the perfect touch to make this Greek salad even more amazing.

This Greek salad reminds me of the Greek salad you will get when you visit Greece. My husband and I traveled there two years ago for our honeymoon and it was absolutely amazing! And something I couldn’t stop ordering was the traditions Greek salad. And let me tell you, it was the most delicious thing ever!

Now there are some tips and tricks to getting the perfect Greek Salad.

Tip One: Keep your vegetables in big chunks. DO NOT finely dice your vegetables. You want big bites of their deliciousness, not for them to be lost in your dressing.

Tip Two: When presenting your salad, put your large feta pieces on top. It may be tempting to crumble it, but don’t! This is the traditional way of serving Greek Salad, and the reason is so when you pour your olive oil and thyme on top, your feta also gets seasoned. It also makes it a little funner to eat breaking the cheese up yourself!

Tip Three: As always, try and use the freshest ingredients you can. Fresh and crisp vegetables would be best for this if you can.


Healthy Greek Salad

with Kalamata Olive Purée

Ingredients

  • Greek Salad
  • 2-3 medium tomatoes

  • 1 medium cucumber

  • 1/2 small red onion

  • 1 green bell pepper

  • 6 tbs extra virgin olive oil

  • 1/2 tbs dry thyme

  • 8 oz of Feta cheese block, do not crumble!

  • Olive puree
  • 1/2 cup jarred Kalamata black olives

  • 4 tbs olive oil

Directions

  • Greek Salad
  • Cut your tomatoes in wedges. Cut your cucumber to 1/2 inch slices. Cut onion and bell pepper into thin slices.
  • Olive Purée
  • In a blender or food processor add your olives and olive oil. Blend until smooth. Add more olive oil if needed.
  • Assembly
  • In a serving bowl or plate, add your tomatoes, cucumbers, onion and bell pepper. Give it a slight mix. Add your feta chunk on top. Drizzle with your olive oil, and sprinkle your salad with thyme.
  • To serve, use a spoon to spread your olive purée on a plate. Top with your Geek salad and enjoy! 🙂
