Jump to RecipeWhen I had my first taste of coffee, it was a white chocolate mocha from Starbucks! That was many years ago, and now I drink it a wee bit more black, but I still love to have a white chocolate mocha for a special treat now and then.
Then I thought, why not make a cookie version!?
If you have never have ground coffee in cookies before, let me tell you it is a game changer! The ground coffee makes this cookie! It adds the most perfect amount of coffee taste, and will make your kitchen smell heavenly while it bakes.
So why not make your morning coffee even BETTER by dipping one of these cookies into it?
White Chocolate Mocha Cookie

Ingredients
3/4 cup salted butter, melted
3/4 cup light brown sugar
1/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 teaspoons cornstarch
1 teaspoon baking soda
2 cups all purpose flour
1 tablespoon ground coffee, fine or coarse
1/2 cup white chocolate chips
Directions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl whisk together melted butter, brown sugar, and granulated sugar until combined.
- Add egg and vanilla extract. Mix until combined.
- Add in cornstarch, baking soda, flour, and ground coffee. Mix until all flour clumps are gone and combined.
- Stir in white chocolate chips.
- Scoop dough in tablespoon sized balls onto your prepared baking sheet. Bake at 350F for 10-13 minutes until edges are starting to get golden brown. Enjoy 🙂

- Store cookies in an airtight container at room temperature for up to 1 week.
