S’more Brownies

Bring the iconic summer campfire dessert to your home, any day of the year with these brownies! I took my favourite brownie recipe, and turned it into s’more brownies. These brownies have a delicious graham cracker crust, and are topped with some roasted marshmallows. Could a brownie get any better?

Tip One: Make sure you pre-bake your graham cracker crust before adding the brownie batter. This helps ensure it will not get soggy!

Tip Two: Roast your marshmallows after your brownies are baked! This is simply done by topping your brownie (after it’s done baking fully) and then putting it under the broiler for one minute. DO NOT bake your brownies with the marshmallows on top. This will lead to the marshmallows being baked too long and create little craters in your brownies. Not yummy.

Ingredients

  • Graham Cracker Base
  • 10 graham cracker sheets

  • 6 tbs melted butter

  • Brownies
  • 1/2 cup salted butter

  • 1 cup semi-sweet chocolate chips and 1/4 more to stir in later

  • 1/2 cup white sugar

  • 1/2 tbs vanilla extract

  • 2 large eggs whisked

  • 1/2 tsp baking powder

  • 1/4 cup all purpose flour

  • 1/4 cup cocoa powder

  • 1 cup mini marshmallows

Directions

  • Graham Cracker Base
  • Preheat oven to 350F. Prepare an 8×8 baking dish by greasing and lining it with parchment paper.
  • Using a food processor crush the graham crackers into crumbs. In a medium bowl mix the graham cracker crumbs and melted butter together. Press the graham cracker butter mixture on the bottom of your prepared 8×8 dish in a flat layer. Bake at 350F for 10-15 minutes.
  • Brownie
  • While graham cracker base is baking, make brownie batter.

    In a large microwavable bowl add butter and 1 cup of chocolate chips together. Microwave for 20 second intervals, stirring each time in-between, until the chocolate and butter are melted and mixed together.
  • Add the sugar to your chocolate/butter mixture. Mix until combined.
  • Add in vanilla and pre-whisked eggs. Stir until combined. It will take a couple of stirs for it to be fully combined, but keep stirring until it does.
  • Stir in your flour and cocoa powder until just combined. Then stir in the baking powder. Then lastly stir in 1/4 cup of chocolate chips.
  • Assembly
  • Once graham cracker crust is pre-baked, pour brownie batter on top. Bake at 350F for 28-30 minutes until you can insert a toothpick and it comes out clean.
  • Marshmallow topping
  • After brownies are done baking, add your mini marshmallows on top of your brownie in a single layer. Broil in your oven for one minute. Keep a close eye on it as your marshmallows will toast quick.
  • Let brownies cool for at least 10 minutes before removing from pan. Enjoy! šŸ™‚
