Creamy Apple Chicken and Brie Skillet Dinner

A quick one skillet chicken dinner, filled with delicious creamy apple cider sauce, and topped with melted brie.

This skillet dinner is so easy, yet so delicious.

All you do is season your chicken with a little bit of herbs, salt and pepper and flour. Give it a sear on your skillet, making it golden brown on both sides. Set your chicken off the skillet to the side. Brown up some chopped onion, add in your chicken stock, apple cider, and cream and give it a mix. Re-add your chicken with some chopped apples and bake for about 15 minutes. Top your chicken with some brie, let it get melty under your broiler for a minute, and you are done!

Then you can eat it as is alone, or serve it on top of some rice, mashed potatoes, mashed cauliflower (my personal favourite), orzo, or whatever your heart desires!

Tip One: Now let’s start with the tools to make this. I use a cast iron skillet, but any oven safe skillet, or even dutch oven will work!

Don’t have an oven safe skillet? No worries. Go through all the steps until you have to put the skillet in the oven, and instead simply transfer everything to a baking dish. You will have to increase the cooking time by 5 minutes or so, and have an extra dish to clean in the end, but still doable!

Ingredients

  • 2 tablespoons olive oil

  • 4 boneless skinless chicken breasts

  • 2 teaspoons dried thyme

  • Salt and Pepper to taste

  • 1/2 cup all purpose flour

  • 1/2 medium white onion diced

  • 1/2 cup chicken stock

  • 1/4 cup apple cider vinegar

  • 1/2 cup heavy cream

  • 2 apples sliced

  • 1/4 wheel of brie, cut into 4 slices

Directions

  • Preheat oven to 400F.
  • Heat olive oil in an oven-safe skillet over medium high heat. In a medium sized shallow bowl mix flour, salt, pepper, and 1 teaspoon thyme together. Dredge (coat) your chicken in the flour mixture.
  • When the oil is shimmering, add the chicken and sear on both sides until golden , about 3-5 minutes each side. Remove the chicken from the skillet.
  • To the same skillet add the diced onion and cook for about 3 minutes. Add chicken stock and bring to a boil. Cook for about 5 minutes. Take off heat and add in the apple cider vinegar, cream, and 1 teaspoon of thyme. Stir until combined.
  • Return the chicken back to the skillet and add your apple slices. Transfer to the oven and cook uncovered for about 10-15 minutes until the chicken reaches an internal temperature of 165F.
  • Once the chicken is cooked, add the brie on top and cook under the broiler in your oven for about one minute until melted. Keep an eye on it as the broiler works fast!
  • Serve the chicken on top of mashed potatoes, mashed cauliflower, rice, or whatever you stomach desires. Enjoy! 🙂

Notes

  • If you want a serving for two, just use 2 chicken breasts instead of 4, but keep the sauce measurements the same.
  • If you are using a large size pan larger than 12″, you may want to double the sauce.
